What I learned today: Invert Sugar

4.10.11 Passover's coming up and macaroons have been popping up everywhere. I picked one up laying around the house today. Kudos to kosher products but one of the ingredients sounded pretty scary: invert sugarSo I looked it up. It falls under the category of processed sugar making it a no-no. For several reasons. But it definitely seems to help keep your macaroons "fresh" from one Passover to another.

Macaroons never go bad. I read that they've found them in the tombs of the pharaohs-- fresh as ever.
